ICMR said in its guidelines that there are many people who cook lentils in the wrong way. For example, they soak the lentils in water before cooking them.
There are some people who immediately put it in the pressure cooker to boil. Due to which the dal sometimes becomes thick and sometimes thin. Sometimes the dal remains raw even after boiling.
ICMR said that the wrong way of preparing lentils destroys the nutrients present in it. Therefore, prepare it in such a way that the nutritional quality present in it remains intact.
According to ICMR, boiling and pressure cooking lentils to cook them maintains their quality.
Phytic acid present in pulses due to improper preparation blocks minerals like calcium, magnesium, zinc and iron.
