Malai Ghevar Recipe: The most liked famous dish of Rajasthan is Ghevar which does not need any introduction. Ghevar is made in every Teej festival of Rajasthan and they eat it with relish. But the trouble increases for those people who like Ghevar but who are not in Rajasthan. Apart from Rajasthan, that taste of Malai Ghevar is rarely seen. Ingredients to make Malai Ghevar
- 500 grams flour
- 150 grams ghee
- 1 1/2 liters of water
- 1 liter milk
- 50 g sugar
- 5 grams green cardamom powder
- 2 pinches saffron
- 2 ice cubes
for garnishing
- 20 grams chopped almonds
- 20 grams chopped cashews
- 10 grams chopped melon seeds
for main dish
- 500 g sugar
- 250 ml water
- 1 pinch saffron
- 3 cups ghee
How to make Malai Ghevar
- To prepare this Rajasthani dish, heat some ghee in a heavy bottom pan and when the ghee is sufficiently hot, turn off the flame and add ice cubes. This will remove the impurities and only pure ghee will remain in the pan.

Make sure you beat the ghee and ice well until the texture becomes frothy. Now prepare the batter by adding refined flour to the ghee. Heat ghee in a heavy bottom pan, place a round mold and start pouring. Pour batter in the middle, fry till it turns golden brown.

Now to prepare the sugar syrup for the main dish, heat water and sugar until the sugar dissolves completely. Put the fried ghevar in the hot sugar syrup and take it out.

To make cream, heat milk, sugar, cardamom powder, saffron and reduce it to half. Allow the cream paste to set and become thick. Pour the cream on the ghevar and garnish with chopped nuts and saffron.
